Cooked a pork roast overnight in a mix of spices. Nice and tender. Just had a sandwich using a combination sauce made of Carolina Gold and Frank’s Red Hot - sweet and sour, with a good bite. Yum.

Despite spending 45 years in SoCal I have never had a torta.
Having moved to the Midwest a few years back, good Mexican food was something that took a while to find. I found a great place that’s near my old office, but nowadays I don’t get out that way very often. In such cases I just make my own, like I’ll do with this stuff.

The Torta is the is the unknown hero of a taquerias. I will take a torta over a burrito 9 times out of 10.

Maybe I should try one. But I am such a taco die-hard that I order the same thing every time, changing up the drink on occasion from a Mexican Coke to iced tea. I just love corn tortillas, especially when they’re just a little fried. Still soft, but with a little crunch. Sometimes I’ll just have some with a little butter, no filling.

Given my colon problems I am very careful with that. Lots of ve gies, extra fiber, etc. Many days are ‘no meat’ days, so this is a little treat.
And not to worry - that was the whole roast, and only a small portion was used for lunch...
